  • You can brine you porkchops 30min-4hrs before cooking with some salt, garlic, peppercorns, fresh herbs and lemon to season the interior.
  • The oven will help control cooking rates and prevents the outside form over getting dry before the center has finished cooking.
  • Get a great cast iron to make thigs even easier, this way you can move stove-to-oven on the same skillet
  • Pat the meat with a napkin before bringing it to the stove, this way you will have and even crispier finish.
