Ingredients
-
2 racks of pork baby back ribs
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar and sesame oil
- 4 cloves garlic, minced
- 1-inch ginger, minced
- 2 tablespoon gochujang (Korean chili paste) and honey
- 1 tablespoon sesame seeds
- 4 green onions, chopped
- Salt and pepper to taste
Directions
- 1. Thaw your ribs in a sealed plastic bag and submerge them in cold water, changing it every 30 minutes. Get ready to cook!
- 2. Prepare the marinade in a large bowl, mixing together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, gochujang, and honey. Stir until the sugar is dissolved and everything is well combined.
- 3.🥩Marinate the ribs in a large resealable bag or a deep dish. Remove the membrane from the back of the ribs and pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
- 4. Preheat your grill to medium-high heat, around 375°F (190°C).
- 5. Remove the ribs from the marinade and let any excess drip off. Season with salt and pepper.
- 6. Grill the ribs, bone side down, for about 5 minutes on each side to get a good sear, then reduce the heat to medium and cover the grill.
- 7.⏳Cook low and slow for 1 to 1.5 hours, flipping every 20 minutes and brushing with the leftover marinade each time. The ribs are done when the meat is tender and pulls away easily from the bone.
- 8. Rest them for 10 minutes. Garnish with sesame seeds and chopped green onions.
- 9. 🍽️ Serve: Slice the ribs between the bones and serve hot. Perfect for tailgating!
