Ingredients
-
2 cups cooked, shredded Airline chicken (grilled or rotisserie)
- 1 large bag of tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced red onion and sliced black olives
- 1 jalapeño, sliced (optional, for extra heat)
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream and salsa
- 1 avocado
- 1 lime
Directions
❄️ Thaw your airline chicken in a sealed plastic bag and submerge it in cold water, changing it every 30 minutes. Easy-peasy method!
Season the chicken with your favorite spices (like chili powder, cumin, and paprika) and grill until fully cooked.
🍗Shred the chicken once it's cool enough to handle.
Preheat the Grill: If you’re using a charcoal grill, prepare a medium-hot fire. For a gas grill, set it to medium-high heat.
Assemble the nachos on a large grill-safe baking sheet or a grill pan. Spread a layer of tortilla chips.Top with shredded chicken, black beans, corn, red onion, black olives, and half of the cheese.
Grill the baking sheet or pan. Close the lid and cook for about 5-7 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning!
Remove the nachos from the grill. And top with remaining cheese, fresh cilantro, diced avocado.
🥄Drizzle with sour cream and salsa. Serve with lime wedges on the side for squeezing over the top.
Recipe Note
💡Chef’s Tip (Mr. Hills Ranch)
Try marinating the chicken in a mix of lime juice, garlic, and spices before grilling.
🔥#MarbleiciousTip:
Add thinly sliced fresh jalapeños for a spicy kick. If you prefer a milder spiciness, remove seeds and inner membranes before adding.

3. Can I add more protein to the nachos?
Yes, you can add other proteins like bacon bits, ribeye, or even shrimp alongside the grilled chicken for an extra protein punch!
